The restaurant is under the direction of Enrique Martínez, the prestigious restaurateur and NH consultant, and is host to the well-known culinary conferences he has organized each fall for a decade, making La Ontina a reference point both inside and outside the culinary world. |
 The conferences came about as an attempt to encouraging culinary innovation and each year reunite the great chefs of Spanish cuisine and the most prestigious restaurants of the country. Here a seasonal and creative cuisine is prepared in a warm and inviting atmosphere. Starters like the cod in "empeltre" olive oil or the puff pastry cookie with vegetables and caramelized foie pave the way for a juicy roast roe deer with spices or a juicy roast turbot with apple sauce. |
 The ample wine list includes regional and national selections that, without a doubt, will bring pleasure to even the most select of gourmets. Spectacular desserts, such as the glazed pineapple millefeuille (cream cake made with puff pastry) and fresh ginger ice-cream or the orange cylinder with frozen lime and mango cream are some of the sweeter offerings.
