Our cuisine
"One of today's top examples of creative Aragonese cuisine. The restaurant is under the direction of Enrique Martínez, the prestigious restaurateur and NH consultant, and is host to the well-known culinary conferences he has organized each fall for a decade, making La Ontina a reference point both inside and outside the culinary world.
 
The conferences came about as an attempt to encouraging culinary innovation and each year reunite the great chefs of Spanish cuisine and the most prestigious restaurants of the country. Here a seasonal and creative cuisine is prepared in a warm and inviting atmosphere. Starters like the cod in "empeltre" olive oil or the puff pastry cookie with vegetables and caramelized foie pave the way for a juicy roast roe deer with spices or a juicy roast turbot with apple sauce.
 
The ample wine list includes regional and national selections that, without a doubt, will bring pleasure to even the most select of gourmets. Spectacular desserts, such as the glazed pineapple millefeuille (cream cake made with puff pastry) and fresh ginger ice-cream or the orange cylinder with frozen lime and mango cream are some of the sweeter offerings.
